Saint-Hilaire Blanquette de Limoux Brut, France, NV

Fizz doesn't get better than this for the money.  Blanquette de Limoux is, they claim, the oldest Sparkling wine in the world.  It's bottle fermented, as in Champagne, with 12 months on the lees using the local Mauzac as the main grape variety.  Think pear, apple, citrus, a hint of brioche and a touch of stone fruit and you'll be there.  In fact, think all that you love about Champagne for half the price and you'll be even more there.  Totally delicious and super classy fizz.
