Founded by Edmond Ayala in 1860 the name comes both from its founder and the fact it is located in the village of Aÿ, a good coincidence! Edmond was known for being a curious and adventurous type not afraid to push boundaries, and the vineyard today still echoes that vibrant and adventurous ethos. The vineyard has since its inception experimented with dosage and is well known for its lower sugar styles. The estate is now owned by Bollinger.
The Ayala Majeur perfectly embodies the AYALA style, and with that acts as sort of an ambassador to the range. It is a Chardonnay dominant blend that is expressed beautifully and in a very elegant fashion. It has a low dosage, again another hallmark of the House and is vinified in stainless steel to protect the delicate aromas. This wine spends 3 years on the lees leading to complex flavours.
A wine with ounces of precision and delicateness but not without complexity, expect flavours of citrus and white flowers accompanied by the dead giveaway flavour of biscuit and brioche that you get in the very best Champagne.
