This was a complete surprise to me when I first came across it. It takes an already delicious grape and makes it even more delicious. Appassimento is the process by which the grapes are harvested, then dried to reduce the water content and concentrate the fruit. The result - a super juicy Christmas cake in a glass. Smooth, ripe and sensual, this is a cuddle in a glass.
